Carrot Cake

3/4 cup sugar
1 cup raisins
1 teaspoon nutmeg
2 cups “Better for Bread” flour
1 1/2 cups water
1 pinch salt
1 cup carrot, grated
1 teaspoon cinnamon
2 teaspoons baking soda
3 tablespoons margarine or oil
3/4 cup walnuts, chopped

Preheat oven to 325 degrees. Grease a 13x9 pan. Mix everything except the flour, salt, nuts, and baking soda in a medium saucepan. Bring to a boil, then let simmer for 5 minutes. Pour heated mixture into a bowl and let cool to room temperature.
When cool, mix in the rest of the ingredients. Pour mixture into the greased pan and bake for 40 minutes or until a toothpick comes out clean.
When cake is cool, frost with your favorite frosting (optional).
