Jenny’S Famous Chocolate Chip, Oatmeal, Coconut, Walnut Cookies

1 cup non-hydrogenated margarine
3/4 cup brown sugar
3/4 cup sugar
2 eggs equivalent using “Ener-G Egg Replacer”
1 teaspoon vanilla

2 1/4 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1/8 teaspoon baking powder

1 cup chocolate chips
1/4 - 1/2 cup (to taste) oatmeal (dry)
1/4 - 1/2 cup (to taste) coconut (shredded)
1/4 - 1/2 cup (to taste) chopped walnuts

Preheat oven to 375 degrees. Cream together first 5 ingredients. Mix together the flour, salt, baking soda and baking powder, then add to the creamed mixture. Then stir in the chocolate chips, oatmeal, coconut, and walnuts. Drop by tablespoons onto an ungreased cookie sheet and bake at 375 degrees for 9 minutes then turn sheet and bake for another 4 minutes. Cool well before removing from cookie sheet.
