My Momma’s Apple Pie
For one crust (you need two for the pie):
1 cup flour
1/2 teaspoon salt
4 1/2 tablespoons oil
2 tablespoons plus 2 teaspoons water
For the filling:
8 - 9 apples, peeled, cored, and sliced thin
1/4 cup flour
3/4 cup sugar
A sprinkle lemon juice
1/4 cup margarine, cut in tabs
Cinnamon
For the crust: mix flour and salt in a bowl. Add oil and water and mix
until blended. Do not mix too much or the dough will become stiff. Roll
dough between 2 sheets of wax paper. The crust should be thin and even.
Lay one crust in the bottom of pie pan. Make another crust as before but
wait before you put it on the pie.
For the filling: place the sliced apples in the pie pan. Put the flour,
sugar, and margarine evenly over the top of the apples. Sprinkle a few
dashes of lemon juice and lightly coat the apples with cinnamon. Place
the second crust on top of the apples and seal the two crusts together
(it doesn’t have to look professional). Poke the top of the pie a few
times with a fork and sprinkle the pie with sugar.
Bake at 400 degrees for 55 minutes.
