Barbequed Tofu

2 tablespoons oil
2 pounds firm tofu, frozen, thawed, squeezed out, and cut into ½” thick strips
1/4 cup water
2 tablespoons peanut butter
1 tablespoon soy sauce
1/4 teaspoon black pepper

Using frozen tofu lends a chewy texture.
Preheat oven to 350º F.
Grease a cookie sheet with oil. Arrange the tofu strips on the oiled cookie sheet.
Mix together water, peanut butter, soy sauce, and pepper. Pour this mixture evenly over the tofu strips and press into the strips with an open hand. Bake for about 15 minutes, then turn the pieces over and bake for about 10 minutes on the other side. Pour your favorite barbeque sauce (or look in the sauces section) over all and bake 10 minutes more.

Serve with French bread and salad.
