Fried Rice with Tomatoes

Several spoons oil
1 box tofu, chopped
3 ribs celery, chopped
2 carrots, chopped
1 tomato, chopped
1/2 package mushrooms, chopped
Soy sauce
2 1/2 cups rice, cooked
Salt and pepper, to taste

Into a large non-stick skillet, heat oil. Add tofu and let cook on medium heat for a minute or two, stirring some. Add celery and carrots and let that cook for a minute, then add mushrooms and tomatoes.
Cover and let cook for a few minutes until some of the juices come out from the mushrooms and the tomatoes.
Turn down the heat to low and add a generous amount of soy sauce.
Add some cooked rice that has been allowed to cool and mix everything together.
Continue cooking until everything is heated through. Add salt and pepper, and serve.
