Lemon Rice (1)

Oil, to fry
1 teaspoon mustard seeds
1 1/2 teaspoons white lentils
2 teaspoons split yellow peas
1-2 tablespoons peanuts, raw

1-2 tablespoons cashews
1-2 red chilies, very hot (optional)
1-2 green chilies, very hot (optional)

1 teaspoon turmeric powder
A few curry leaves (optional)

5 cups cooked rice (can start with 2 cups raw rice)
Salt, to taste
4 small lemons, juiced

Heat oil in a pan and add the first four ingredients in the order specified. After the spices brown and the seeds start to pop, add the next 6 ingredients. Take off the stove, do not cook anymore. Add rice and mix all the ingredients well. Add lemon juice and salt to taste. Mix well.
