Mexican Taco Bar

The Taco Bar includes separate bowls/plates of the following ingredients:
Taco shells
Guacamole
Salsa
Refried Beans
Mexican TVP
Shredded lettuce
Sliced olives
Shredded cheese
Chopped tomatoes
Sour cream

Guacamole

2 ripe avocados, mashed
1 teaspoon lemon juice
? cup mayonnaise, Vegenaise, or sour cream
1 dash curry powder (optional)
Salt and pepper, to taste
1 teaspoon green Tabasco sauce*

Mix all ingredients together thoroughly.
*Substitute green Tabasco for ½ teaspoon lemon juice and ½ teaspoon chopped jalapeno peppers.

Refried Beans

2 teaspoons tomato paste
1 can vegetarian refried beans
1 teaspoon cumin
Salt and pepper to taste

Mix all ingredients together. Serve warm.

Salsa

1 can corn, drained
1 20-ounce can crushed tomatoes
1 can black beans, rinsed and drained
1 large tomato, diced
1-2 fresh jalapeno peppers, diced
1 teaspoon sugar
1 tablespoon fresh basil, minced
2 tablespoons vinegar
1 tablespoon fresh parsley, minced

Mix all ingredients together and let sit in refrigerator overnight. This makes a lot, but it can be frozen.
Serve with tortilla chips.

Mexican TVP

1/2 - 1 bag TVP
Crushed tomatoes
A lot cumin
A little good soy sauce (Kikkoman)
Salt and pepper to taste
Red and green Tabasco sauce

Soak TVP in water for a few minutes until it is soft. Then squeeze as much water out as possible. You can repeat this step two or three times to get rid of the flowery taste of the TVP. Cook TVP with the ingredients above. Serve.
