1 cup lentils
4 cups water
2 cups rice
1 tablespoon cumin
Salt
Pepper
1 tablespoon olive oil
1 tablespoon dried parsley
In a saucepan simmer lentils and water for 5 minutes. Add rice, cumin,
salt, pepper, olive oil, and dried parsley.
Bring the water to a boil. Reduce heat to a simmer and cook until the
rice is done.
Serve rice with: canned beats, green salad, green beans, and lemon wedges.
