RICE PILAF
1 green bell pepper, sliced and cut in half
4-6 ounces frozen corn
2 cups cooked, fluffy basmati or jasmine rice
1/2 cup green beans, sliced in thirds
2-3 carrots, sliced
4-6 ounces frozen peas
2 whole cloves
1 bay leaf
1 1/2 teaspoon cumin powder
1/2 teaspoon coriander powder
Shredded coconut (optional)
5-6 coriander leaves
1 teaspoon garam masala
1/2 teaspoon cinnamon (optional)
Black pepper
3-4 tablespoons oil
Coconut, for garnish (optional)
Salt
Heat oil on medium. Sauté bay leaf, cloves, cinnamon, garam masala,
coriander, and cumin. Add coriander leaves.
Add the frozen corn and peas after they have been thawed. Then, add bell
peppers, green beans, and carrots. Let cook. Season with black pepper.
If desired, add cinnamon.
Mix in rice. Garnish with coconut.
