Subzika Salan (Vegetable Curry)
3 tablespoons oil
1 teaspoon cumin seeds
3 green chilies, finely chopped
1 teaspoon chili powder
1/2 teaspoon turmeric powder
1 can crushed tomatoes
1 cup yogurt
3 cups mixed boiled vegetables (French beans, carrots, green peas, cauliflower,
or potatoes), cut into big pieces
3 cups coconut milk
1 teaspoon garam masala
Salt, to taste
Heat the oil, add the cumin seeds and fry until they crackle. Add the
green chilies and fry for a few seconds.
Mix the chili powder and turmeric powder with a little water, and then
fry for a few seconds.
Add the crushed tomatoes and yogurt and fry for a few minutes. Add the
vegetables and fry again.
Add the coconut milk and bring to a boil.
Sprinkle the dry powder over the vegetables and cook for a few minutes.
Add salt.
Serve hot.
