Hummus (1)

1 can chickpeas, rinsed and drained
Juice of 1 lemon
1 tablespoon olive oil
2 tablespoons tahini (ground sesame paste)
Salt and pepper to taste

Combine all ingredients in a blender or food processor and blend until smooth.

Serve with pita or carrot sticks.

Red pepper hummus: add 1 cup roasted red peppers (homemade or from a jar, drained) before blending

Horseradish hummus: mix in 1 tablespoon ground horseradish (from a jar)
