Tofu Green Mayonnaise

1 box tofu (medium or firm)
Oil
Dried herbs
Lemon juice
Salt
Lots fresh parsley, chopped (you can use other fresh herbs, such as basil)

Mix the tofu, lemon juice, oil, salt, and dried herbs. Puree with a hand-held mixer or a food processor. It should be smooth. Add the fresh chopped herbs.

Serve with steamed veggies, such as cauliflower, carrots, potatoes, etc.
