Tomato Sauce

2 pounds fresh tomatoes, peeled and seeded*, and chopped into ½” pieces
1 teaspoon Italian seasoning
1 teaspoon dried basil
3 tablespoons extra-virgin olive oil
Salt
Freshly ground black pepper

In a medium saucepan combine the oil, Italian seasoning, basil, and tomatoes. Cook over medium heat for 25 to 30 minutes. Add salt and black pepper to taste. You can puree the sauce in a blender or serve it as it is.

*Can use the canned equivalent
