Tzatziki (excellent Greek yogurt dip)
1/2 cucumber, shredded or very finely chopped
Salt
2 cups plain (unflavored) yogurt
2 teaspoons olive oil
1 teaspoon vinegar
2 teaspoon chopped fresh mint, or ½ teaspoon dried mint
1 teaspoon chopped fresh dill or ¼ teaspoon dried dill (optional)
Salt and pepper
Put cucumber into a colander or bowl and sprinkle with salt. Let stand
30 minutes and then rinse with cold water and pat dry with paper towel.
Mix together with remaining ingredients.
Serve with pitas. This is also good in sandwiches.
