Indian Potatoes

2 tablespoons oil
1/4 teaspoon mustard seeds
1/2 teaspoon turmeric
1 Serrano green chili, chopped into small pieces
3 curry leaves
3 medium potatoes, boiled, peeled and chopped into medium-sized pieces
Salt, to taste

Heat the oil in a pan. Add mustard seeds. When they pop, add curry leaves and chili pepper.
Add turmeric powder and the chopped potatoes.
Fry it all together. Add salt to taste.

For Peanut Potatoes: follow the directions above. Add cumin seeds to the oil instead of mustard seeds. Add sugar to the potatoes when you add salt. At the end, add ground (granular) roasted peanuts. Sauté the potatoes.
