Sweet Potato Oven Fries

Recipe is from Trim & Terrific Cookbook by Holly Clegg.

4 medium to large sweet potatoes (yams)
1/4 cup olive oil
Salt, to taste
Parsley, for garnish

Preheat the oven to 400 degrees. Cut the sweet potatoes lengthwise into 1/2-inch-thick strips and toss with the olive oil.

Coat a baking sheet with nonstick cooking spray and arrange the potatoes on the baking sheet. Bake the potatoes for 15 to 20 minutes, or until golden brown on the bottom. Turn potatoes over and bake for 15 to 20 more minutes, or until golden brown all over.

Sprinkle with the salt, add the parsley for color and serve.

For variation, sprinkle with 1 teaspoon each cinnamon and nutmeg.

Serves 4 to 6.
