Veggie Chili
The night before: Place in crock pot
1/2 cup chick peas
1/2 cup navy beans
1/2 cup kidney beans
4 cups water
cook on low overnight (6-10 hours)
In the morning add:
2 grated carrots
1/2 cup sliced celery
1/2 cup chopped green pepper
2 cups canned whole tomatoes mashed
2 cups sliced fresh mushrooms
2 cups tomato sauce
1 1/2 tablespoon chili powder
Cook on Low 6-8 hours, High 3-4 hours
Good with Cornbread
