Scones
Orange Pecan
2 1 cup flour
2 1 tsp baking powder
1 tsp salt
5 Tbs sugar
1 can of mandarin oranges (11 oz), drained
1 tsp orange zest
1/3 cup chopped pecans
1/3 cup butter, cut up
1/3 cup milk or soy milk
1 egg
Combine first four ingredients and add butter. Combine together with a fork until crumbles form and butter is evenly distributed. And remaining ingredients and stir together to combine. Drop onto a cookie sheet and bake at 400 degrees for 20 minutes. Makes 8-10 scones.
Cinnamon Raisin (vegan)
2 cups flour
3 tsp baking powder
1 tsp salt
2 Tbs sugar
1 rasins (or other dried fruit such as cranberries, cherries, or blueberries)
1 tsp cinnamon or apple pie spice
1 cup vegan maragrine
3 to 1 cup soy milk
Combine dry ingredients and add margarine. Combine together with a fork until crumbles form and margarine is evenly distributed. And remaining ingredients and stir together to combine. Drop onto a cookie sheet and bake at 450 degrees for 10-12 minutes. Makes 6-7 scones.
