Tea Sandwiches
Carrot and Ginger Salad
2 grated carrots
2 Tbs cream cheese (or vegan cream cheese), softened
2 Tbs mayonnaise (or vegan mayonnaise)
1 tsp grated fresh ginger
salt and pepper to taste
4 slices of bread
Mix all ingredients together and spread on bread to make two sandwitches. Cut off crusts and cut each sandwich into 3 pieces. Makes 6 tea sandwiches.
Cucumber
Spread two pieces of bread with butter or margarine or mayonnaise. Add thin slices of cucumber, fresh or dried dill, and salt and pepper. Make a sandwich and cut off crust. Cut into 3 equal pieces.
Radish
Spread two pieces of bread thinly with cream cheese. Add thin slices of radishes with salt and pepper. Make a sandwich and cut off crust. Cut into 3 equal pieces.
Watercress
Spread two pieces of bread thinly with softened goat cheese or Boursin cheese. Add chopped fresh watercress. Make a sandwich and cut off crust. Cut into 3 equal pieces.
Jam
Spread fruit preserves between two slices of bread. Cut off crust. Cut into 3 equal pieces.
