Zucchini and Scrambled Egg

Zucchini and Scrambled Eggs

1 small zucchini: 1 egg (1 large zucchini: 2 eggs)
1 teaspoon salt; more or less depending on your taste
Pepper

Peel and grate zucchini. Cook over medium heat. Add salt and pepper.
When zucchini is soft, add egg. Stir the egg enough so that all of it gets cooked, but not too much or it will not be fluffy.

Option: add chopped tomato to zucchini while cooking.
