
Beans on Toast
(traditional breakfast)
serves 4
1 15 oz can pinto beans, drained
2 Tbs butter or vegan margarine
1 tsp dried sage
1 1 Tbs tomato paste
3/4 cup water
1 tsp soy sauce
1 tsp sugar
1 tsp vinegar
salt and pepper to taste
4 slices of toast
In small saucepan over medium heat, melt butter and sage and cook together for 2 minutes. Add tomato paste, beans and remaining ingredients and simmer together 3 more minutes. Serve on hot buttered toast.
