Curried Lentil Soup

1 cup red lentils (well washed) (available at Whole Foods or Indian stores)
1 Tbs curry powder
2 cups mixed chopped veggies (cabbage, carrots, celery, peppers, mushrooms, potatoes, tomatoes or whatever you have in the fridge)
4 cups water
oil, salt, soy sauce

In soup pot, heat up curry powder in 1 Tbs oil and simmer for a minute. Add veggies and sautee for a minute or two. Add lentils, water and salt and bring to a boil. Simmer for 30 min and add salt or soy sauce to taste.
