
Shepherd's Pie
1 cup white cabbage, diced
1 cup carrot, diced
1 cup celery, diced
1 cup green pepper, diced
3 cups mushrooms, diced
2 Tbs oil
1 tsp dried thyme
1 tsp dried oregano
2 tsp dried parsley
2 15 oz cans of lentils, drained (or 2 2/3 cup cooked lentils)
3 Tbs tomato paste
salt and pepper to taste
5 cups mashed potatoes
Over medium high heat, fry cabbage, carrots, celery, and mushrooms in oil for 5 minutes. Add lentils, tomato paste and spices and combine. Place lentil mixture into bottom of a 9 X 13 pan and top with a layer of mashed potatoes. Bake at 375 degrees 20-25 minutes, until bubbly.
