Spinach Panir (with Tofu)
1 pkg of tofu cubed (14 -16 oz) (can substitute 1 pkg of panir, cubed)
1 lb frozen chopped spinach (thawed)
1 1/2 tsp cumin seeds
1/2 tsp ground fenugreek (optional)
scant 1 1/2 Tbs minced fresh ginger
1/2 cup cream, milk, or soy milk

Heat a large pan to medium high with a Tbs of vegetable. Add tofu cubes and brown on both sides, salting generously. Remove from pan and add another 1 Tbs of oil. Add cumin, funugreek and ginger and sautee for one minute. Add spinach and heat until warmed through. Add tofu back in to the pan along with the soy milk. Add salt to taste and heat until bubbly. Serve with rice and lentils.
