Macaroni and Cheese


1 package (16-ounce) elbow macaroni
3 tablespoons oil
1/4 cup milk or soy milk
12 ounces shredded cheese (Monterey jack, cheddar, or Colby jack)
Salt and pepper

Cook macaroni according to directions. Drain.
Add the rest of the ingredients to the pasta. Stir everything together over low heat until smooth sauce forms. For baked macaroni and cheese, transfer to greased casserole dish, cover with more shredded cheese and bake at 325 for 20 minutes.
