Mediterranean Lentil Burgers

Mediterranean Lentil Burgers

3 1 cups water
1 cup lentils, sorted and rinsed
1 bay leaf
1 tsp each dried basil, oregano and thyme
1 tsp red pepper
1 cup sun dried tomatoes, cut into small pieces
1 cup each minced white cabbage, minced carrots and minced celery
1 1 cups rolled oats, or quick cooking oats
1 cup fresh spinach or arugula
salt and pepper to taste
olive oil

In a small sauce pan, combine water, lentils and seasonings. Cook over medium to medium high heat for 25 minutes. Add sun dried tomatoes and continue to cook until lentils are tender and all the water is absorbed. Remove sauce pan from heat and remove bay leaf. Mash lentils with a fork and add remaining ingredients. Stir well and let cool. Form into patties and fry in a lightly oiled skillet over medium heat until brown on both sides.
