Tofu Loaf

3 16 oz packages firm or extra firm tofu
1 cup minced white cabbage
1 cup minced green bell pepper
1 cup minced celery
1 8 oz pkg mushrooms, minced
3 cup plain bread crumbs (or crushed stale bread or crushed crackers)
1 cup soy sauce
1 Tbs each dried parsley, dried thyme, dried oregaon
1 tsp red pepper
2 tsp salt

Combine all ingredients and mix together thoroughly. Put into a 9 X 13 dish and top with tomato sauces or ketchup. Bake at 375 for 1 1/2 hours or until the tofu loaf has shrunk and pulled away from the edges of the dish.

Ketchup

1 6 oz can tomato paste
1 cup water
2 Tbs vinegar
1 tsp salt
3 tsp sugar
1 Tbs vegetable oil

Wisk all ingredients together until combined and smooth.
