Vegan Tofu Cheesecake
1 lb silken tofu
1/3 cup sugar
1 Tbs tahini
1 Tbs lemon juice
1 tsp lemon zest
1/2 tsp salt
2 Tbs cornstarch dissolved in 2 Tbs water
1/2 tsp vanilla extract
blend all ingredients together until smooth, pour into pie pan lined with crumble (see below), bake at 350 for 20 or 30 minutes until the center is firm.

in a bowl mix together 3/4 cup flour and 1/4 to 1/2 cup oil with a fork until a crumbly and then add 1/3 cup sugar
