Sweet Potato Oven Fries
4 medium to large sweet potatoes, peeled
1/4 cup vegetable oil
Salt, to taste
Parsley, for garnish
Preheat the oven to 400 degrees. Cut the sweet potatoes lengthwise into 1/2-inch-thick strips and toss with the oil. Arrange the potatoes in a single layer on the baking sheet. Bake the potatoes for 15 to 20 minutes, or until golden brown on the bottom. Turn potatoes over and bake for 15 to 20 more minutes, or until golden brown all over.
Sprinkle with the salt, add the parsley for color and serve.
For variation, sprinkle with 1 teaspoon each cinnamon and nutmeg.
Serves 4 to 6.
