
Okra and Tomatoes
1 lb fresh or frozen okra (thawed), sliced
2 Tbs vegetable oil
1 14.5 oz can diced tomatoes
1 tsp sugar
salt to taste
few dashes of red Tobasco sauce
Heat oil in skillet over medium heat and add okra. Fry for 7-10 minues until tender. Add remaining ingredients and simmer together for 3-5 minutes to reduce the tomato liquid a little.
