South Beach Oven Roasted Vegetables

1 medium zucchini
1 medium summer squash
1 medium red bell pepper
1 medium yellow bell pepper
1 pound fresh asparagus
3 tablespoons extra-virgin olive oil
1 teaspoon salt
1 teaspoon freshly ground black pepper

Cut all vegetables into bite sized pieces (however you like them: strips, cubes). Heat oven to 450 degrees. Place veggies in large roasting pan. Toss with the olive oil, salt, and pepper to mix and coat. Sprinkle in a single layer in the pan. Roast for 30 minutes, stirring occasionally, until the veggies are lightly browned and tender.
