tofu quiche

Mushroom and Red Pepper Tofu Quiche

2 16 oz pkg firm tofu, mashed
1 cup chopped white cabbage
1 cup diced red pepper
1 cup nutritional yeast
8 oz mushrooms, sliced
2 tsp ground thyme
3 Tbs soy sauce
2 Tbs mustard
1 Tbs dried oregano
1 Tbs fresh chopped parsley or 1 tsp dried parsley
1 tsp salt

In a few Tbs of oil, saute the cabbage, red pepper and mushrooms over medium high heat. Mix the veggies with all the remaining ingredients in a large bowl and then place into a greased 2 quart casserole and bake at 375 for 1 hour.
