Tomato Basil Soup

Tomato Basil Soup

1 cup butter, melted
2 tablespoons flour
2 cups vegetable broth (can use water)
4 peeled tomatoes (or 2 cans peeled tomatoes)
1 cup whipping cream
7-9 leaves basil, cut into thin strips
Salt
Pepper

In a blender, puree butter, flour, and broth. Add tomatoes and puree. Put mixture in pot. Add basil, cream, salt, and pepper. Cook. If soup is too thick, add more broth or water.

(This soup turns out best when using real cream, butter, and fresh basil)
