
Couscous with Lentils
Prepare couscous:
1 cup couscous
1 1 cup boiling water
1 tbs olive oil
1 tsp salt
1 cup diced carrot
1 cup diced cabbage
1 cup diced zucchini
1 can (15 oz) lentils, drained or 1 1 cup cooked brown lentils
1 Tbs dried parsley, or 2 Tbs chopped fresh parsley
salt and pepper to taste
Fry carrots and cabbage in 2 Tbs olive oil for 2-3 minutes over medium high heat. Add zucchini and fry for 5 more minutes. Add salt and pepper and turn heat down to low. Add lentils and couscous and heat until warmed through. Remove from heat and add parsley.
