Greek Pizza

1 lb pizza dough
1 Tbs olive oil
1 Tbs oregano
1 tsp crushed red pepper flakes

1 8 oz pkg of sliced mushrooms (crimini are best)
6 oz roasted red peppers, sliced
3/4 cup thawed and drained frozen spinach
1 large tomato, diced
3 oz feta cheese, crumpled
3 oz goat cheese, crumpled

Fry the mushrooms in a little oil until tender. Roll pizza dough out onto a cookie sheet. Brush with olive oil and sprinkle with oregano and red pepper flakes. Arrange peppers, tomato, mushrooms and spinach on pizza and top with cheese. Bake at 425 for 10-15 minutes or until dough is cooked and cheese begins to brown.
