
White Beans and Tomato

1 15 oz can cannelini beans (or white beans or great northern beans), rinsed and drained
1 medium tomato, diced finely then mashed with a fork
2 Tbs olive oil
1 tsp dried oregano
2 Tbs tomato paste
Over medium heat, simmer tomato for 5 minutes. Add rest of the ingredients and cook together for another 5 minutes. Serve warm or cold with rice or couscous. Makes 2-4 servings.
