TofuTofu is made from soybeans. It is an excellent source of protein for vegetarians and non vegetarians alike. Tofu is usually sold packaged in water. It can be found in the refrigerated section near the produce or in the dairy section of most regular grocery stores, health food stores, and Asian grocery stores. Generally, the tofu found in Asian stores is the highest quality and the tastiest (after all Asia has been making tofu for centuries!). This kind of tofu comes labeled as firm or extra firm, or as soft or silken. The firm or extra firm kind can be cut up and fried or baked. The silken or soft kind has a custard like consistency and is usually blended into smoothies or used in baking or in recipes needing something a little creamy. Tofu packaged this way will keep in the refrigerator for some time (check expiration date on the package). Fresh tofu should not have a sour smell and should be pale in color.
Once the package has been opened, the tofu should be stored in the refrigerator in a covered dish, submerged in water. Change the water every 2 or 3 days. In some Asian stores one can find firm tofu that has already been deep fried. This kind of tofu is featured in the Gado Gado recipe.
Tofu can also be found in sealed boxes. This kind of tofu does not need to be refrigerated. It is often found on the Asian foods or international foods section of grocery stores. These boxes have a very long shelf life. The firm and extra firm tofu found in the boxes is typically less firm that what can be found packaged in water. However it is perfect for certain dishes such as tofu egg salad. The soft version of this kind of tofu is featured in the vegan stuffed mushrooms recipe.
