
Cuban Coleslaw
Salad:
2 sweet potatoes
1/4 head of purple cabbage
1 jicama (you can substitute a 2 pears or 2 apples, but a jicama is the best)
Dressing:
1/2 cup of lime juice
3 tablespoons honey
1 teaspoon brown sugar
Peal the sweet potatoes and jicama. Chop them finely (julienne), or
use a food processor). Shred the cabbage and mix all vegetables.
Mix dressing ingredients and mix with the salad. For sweater taste
make two dressings.
