Quesadillas

 

Classic Cheese Quesadillas

2 flour tortillas
shredded cheddar and Monterey jack cheese
vegetable oil

Make a tortilla sandwich with the filling ingredients and spray cooking spray on tortillas on the outside. Place Quesadillas into a frying pan on medium heat and fry on both sides until quesadillas are brown and cheese is melted. Serve with sour cream, salsa or guacamole.

Bean Quesadillas

Make just like classic cheese quesadillas, except spread a layer of refried beans (from a can or see recipe) on one of the tortillas before adding cheese.

Spinach Quesadillas

2 tortillas (spinach flavored tortillas even better)
sliced or shredded pepper or plain Monterey jack cheese
fresh baby spinach

Heat oven to 425 degrees. Lay one tortilla on cookie sheet and layer with cheese, a heaping pile of fresh spinach, more cheese and second tortilla. Spray top tortilla with a little cooking spray (optional). Bake in oven for 5-7 minutes until browned and spinach is wilted.

Veggie Quesadillas

2 tortillas (tomato flavored tortillas even better)
diced tomatoes
diced bell peppers (red and/or green)
sliced olives (optional)
shredded cheese
Cooking spray

Prepare same way as spinach quesadillas, except substituting tomatoes, peppers and olives for the spinach.
