
Cauliflower with Cumin, Paprika and Caper Vinaigrette
1 large head of cauliflower, cut into florets
1 Tbs cumin seeds (or 1 Tbs ground cumin)
1 Tbs red wine vinegar
1 tsp paprika
2 Tbs capers, drained
1/3 cup olive oil
1 tsp red pepper flakes
1 tsp salt
1 Tbs chopped fresh parsley
Cook the cauliflower in a little salted water until tender. Drain and let cool. Combine all ingredients except cauliflower in a bowl and wisk together. Pour the marinate over cauliflower and toss. Serve at room temperature.
