
Tempeh Fajitas
1 pkg tempeh, sliced into strips
1 red bell pepper sliced into strips
1 yellow bell pepper sliced into strips
3 portabello mushroom caps sliced into strips
1 tsp cumin
1 tsp paprika
1 Tbs soy sauce
1 Tbs basalmic vinegar or lime juice
salt and red pepper to taste
6 flour tortillas
In a hot skillet, brown the tempeh strips in some oil. Remove from pan and add mushrooms and peppers. Sear the veggies by sauteeing on medium high heat for a few minutes. Return the tempeh to the pan and add cumin and paprika. Sautee for 1-2 minutes then add soy soy sauce and vinegar and remove from heat. Serve on warm tortillas with sour cream or salsa on the side. Makes approximately 6 servings. |
