Curry

1 15 oz can coconut milk
2 large potatoes peeled and chopped
3 large carrots
1 pkg of mushrooms
1 pk frozen peas
1-2 Tbs curry powder to taste
salt to taste (can add soy sauce too)

Add all ingredients except for peas into large pot, make sure all the veggies are almost covered with the coconut milk. Cover and cook until the potatoes are soft (about 20 min). Then add peas and warm through. Serve with rice.
