Stir Fried Noodles

10 oz firm tofu, sliced into 1 inch strips
12 oz of fettuccini or lo mein noodles
2 medium bell peppers, sliced into strips
6 fresh shitake or 3 small portabello mushrooms, sliced into strips
1 tsp grated fresh ginger
3 Tbs soy sauce
2 tsp sesame oil (optional)
1 tsp sesame seeds (optional)
vegetable oil

Cook noodles according to package directions and drain. In a large skillet or wok brown tofu strips over medium high heat in 2 Tbs of oil and 1 tsp salt. Remove tofu from pan and add 1 Tbs more oil. Add ginger and vegetables and stir fry for 5 minutes, or until the veggies are cooked but still crisp. Add tofu, noodles, soy sauce and sesame oil to the veggies in the pan. Toss everything together and heat all the way through. Serve hot garnished with sesame seeds.
