
Polish Potato Salad
3 cups diced boiled potatoes
2 cups diced carrots
2 cups frozen peas, thawed
1 cup diced celery
1 cup diced pickles
dressing:
1 cup mayonnaise or vegan mayonnaise
1 cup yellow mustard or spicy mustard
1 Tbs dried dill
2 tsp pepper
1 tsp salt
Blend together dressing and toss with vegetables. Chill in refrigerator for 6-12 hours before serving. Serve with crusty bread. Makes 10-12 servings
