Fennel and Grapefruit Salad

1 fennel bulb, sliced
1 grapefruit
olive oil
salt and pepper

Zest the grapefruit to get 1 Tbs of zest. Then remove peel with an knife and cut out the sections. Finally , squeeze out the remaining grapfruit juice from the memberanes and left over pulp. Combine fennel and grapefruit sections and grapefruit zest in a bowl. Drizzle with olive oil, salt, pepper and grapefruit juice. Toss together and serve.

This recipe is even better if you roast the fennel before adding it to the salad.
