Caribbean Beans
3-4 cups of veggies chopped really fine in the food processor (I used 3 stalks of celery, 3 carrots, a big wedge of white cabbage, half of a red bell pepper and half of a green bell pepper)
2 cans of black beans, drained and rinsed
2 cans of black beans, drained and mashed with a fork
1 can coconut milk
1/2 cup apricot preserves
1 tbs paprika
1/2 tbs ground coriander (optional)
1 tbs dried parsley (probably would be even better with fresh, or with fresh cilantro!)
salt to taste
Fry up the veggies in oil on med hi heat to brown them a bit and then add the rest of the ingredients, lower the heat to medium low, and simmer for 20 minutes. Serve over rice. Yummy!
