
Corn and Pepper Relish
1 1/2 cup frozen corn (Trader Joe's roasted corn is best), thawed
1/2 cup diced red bell pepper
1/3 sliced black olives
juice of 1 lime
2 tablespoons vegetable oil
1 tablespoon fresh parsley, minced (optional)
salt to taste
Mix all ingredients together and chill for at least 1 hour.
