
Tofu Egg Salad (vegan)
1 12 oz pkg of firm or extra firm tofu (preferably the box kind)
2 Tbs veganaise
2 tsp mustard
1 tsp tumeric
1 tsp black pepper
1 tsp dried dill (or 1 tsp fresh dill)
1 cup diced celery
1 Tbs fresh parsley (or 1 Tbs dried parsley)
1-1 tsp salt to taste
Mash tofu in a bowl with a fork. Mix in remaining ingredients. Chill 1 hour before serving. Serve on toaast. Makes 4 servings.
Egg salad
1 1 cup chopped hard boiled eggs
2 Tbs mayonnaise
2 tsp mustard
1 cup chopped celery
1 tsp dried parsley
1 tsp red pepper
1-1 tsp salt to taste
Mix all ingredients together in a bowl and serve. Makes 4 servings.
